Chicken Cashew Wild Rice Pilaf
1 small pkg of boneless skinless chicken breasts
1 box of uncle Bens wild rice
1 cup of cashew halves
1 onion, finely chopped
1 T. of soy sauce or Braggs (I prefer Braggs)
1 T. olive oil or butter
Cook chicken until tender and falling apart (I put mine in the crock pot in the morning and slow cook it all day but you can boil it, bake it or cook it however is easiest for you.
Put rice on the stove in a dutch oven and cook according to directions on box. While the rice is cooking, chop onion until fine and saute along with the cashews in a little olive oil or butter. Add the chicken and the onion mixture to the rice and heat through. Enjoy! This is also great reheated in the oven the next day for lunch.
