Cilantro Cream Chicken
2 T. olive oil
2 lbs. boneless skinless chicken breasts (organic is best)
4 oz. cream cheese, cut into cubes
3/4 c. heavy whipping cream
2 T. lime juice
salt and pepper to taste
1/2 c. chopped fresh cilantro
Brown chicken in oil over medium-high heat in large skillet. Remove chicken from skillet. Add cream cheese, whipping cream, lime juice and cilantro to skillet; whisk. Return chicken to skillet. Cover; cook
on low, heat 15 minutes or until chicken is cooked through. Add salt and pepper.
